Description
Basic nutrition knowledge needs to improve drastically. The role of the volunteer is to develop and nutrition education that is locally relevant. Education will incorporate recipes with locally available foods. Innovative approaches welcomed and considered.
Your Role
There is a great need to educate local people about healthy eating practices. At present, FORUDEF would like to be able to educate, but does not have the needed expertise. Therefore, an intern with knowledge in health and nutrition is sought. The intern shall be responsible for creating the educational materials used to teach local people. The intern will develop the educational materials and be the first person to implement the program. It is expected that the intern will evaluate the materials following the first implementation. The program will be taught by subsequent volunteers.
FORUDEF currently runs a program to protect orphans and vulnerable children, and to prevent malaria in children under five. Nutrition Education will have overlap with this program.
Examples of Activities:
* Identify women's groups who will be recipients of nutritional education workshops
* Develop educational materials and program to educate the women
* Organize training workshops
* Carry out demonstrations of relevant recipes
* Evaluate and improve materials following first set of workshops
* Complete end of project report
* Ensure educational materials are complete and ready-to-use for future volunteers
Qualifications
The intern must have a background in nutrition and be able to cook. The position requires that the intern spends some days in the village setting (perhaps 3 days per month). The intern should be able to prepare nutritious dishes using indigenous foods such as tomatoes, potatoes, pepper, cabbage, many other vegetables, fish, rice etc. The intern will take time to learn about food supply at the beginning of the internship by tasting local dishes and visiting market with FORUDEF staff.

* Pre-departure support: You will have a staff member available to support you throughout your time preparing to go abroad. In addition, you will be provided with all the resources you need including your Pre-Departure Manual & Culture Matters Workbook. The pre-departure manual includes all information you need regarding your destination, as well as advice on blogging and fundraising. The Culture Matters Workbook is a self-study course focused on:
- Culture shock
- Issues power and race
- Managing politics, religion, and gender
- Working effectively in a cross-cultural setting
- Preparing to reintegrate as you return home
- Transportation to and from the airport
- Accommodation (single or double occupancy in shared apartment in self catering apartment)
- Laundry, cleaning, and one African meal provided weekly
